Ingredients:
1/4 cup of softened butter
1/2 almond butter
1 banana (2 for added flavor and less sugar)
1 egg
1/4 cup sugar
1 egg
1/4 cup sugar
1 1/4 cups oat flour
1/2 cup of chocolate chips
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoons vanilla extract
1 teaspoon of cinnamon (or to your preference)
Directions:
In a large bowl mash a ripe banana. Mix in almond butter, and softened butter. Add 1/4 cup of the flour, sugar, egg, baking soda, baking powder, vanilla, and cinnamon. Mix well. Add the rest of the flour. Stir in some of those chocolate chips. (be generous, to yourself)
Depending on the texture of the dough, you might have to chill it for a little while. (I just stuck it on the quick freeze shelf for ten minutes)
Preheat your oven to 375 degrees. Grease a cookie sheet. Place spoonfuls of the dough evenly across the pan. Bake for seven minutes. (check them occasionally as some ovens cook slower or faster than others)
When finished, let cool for 2-3 minutes. Place on a cooling rack.
Made about twenty cookies.
