Gluten-free, Dairy free Banana-nut Pancakes

SO I WAS BABYSITTING TODAY, and during lunch time one of the kids informed me that she was "allergic to dairy". This, of course, meant that cheese pizza was not an option. What to do? I immediately searched the web for some dairy-free recipes. None of them spoke to me, so I made one up from a combination of other existing recipes.

Ingredients:
Two bananas (I think that ripe would probably work best)
One egg
One cup of coconut milk (any milk substitute preference works fine)
Two teaspoons of oil (I used grape seed)
One cup of oat flour*
1/4 teaspoon of salt
Two teaspoons of baking powder
Optional: A small portion of sugar (I used about 1 teaspoon because the bananas weren't very ripe)
Ground cinnamon (suggested 1/2 teaspoon from several other recipes)

Preparation
Mix dry ingredients in a bowl (Flour, salt, baking powder)
Mix liquids in a separate bowl (beat egg, oil, milk, mashed bananas)
Combine everything into one bowl, and stir until batter is lumpy

(*Oat flour is simple to make yourself. Just take the amount desired, place it in your food processor, and use the "pulse" setting. I just discovered this today, and who knows if I'll ever buy actual flour again. It was so darn good)

Warm up (medium/low heat) and grease a skillet. Spoon a portion of the batter onto the skillet. Cook for about five minutes per side. (more or less depending on skillet and how hot the stove is)
